We all have a fussy eater to contend with a one stage or another .. especially when it comes to veggies! Our chef Aidan knows that all too well with kids at home himself - so he's came up with our secret sauce, it's jam packed with veggies and is perfect as the base of bolognese, lasagne or just to mix with penne! If you don't have the ingredients listed below - don't worry you can substitute for whatever you have!
2 small onions,
2 celery sticks,
3 cloves garlic,
2 red peppers,
½ butternut squash
Irish rapeseed oil
2 teaspoons mixed herbs
4 tins plum tomatoes
Prepare all the vegetables, make sure to wash the celery and leek. Dice all the veg, or put in a food processor to roughly chop.
Put enough rapeseed oil to cover the bottom of a large pan.
Sweat all the onion, garlic, celery and leek first, over a medium heat.
When the onions are translucent add the rest of the veg, and sweat for a few minutes.
Add the tins of tomatoes and simmer, on low for an hour.
Blend the lot.
Cool, portion, freeze. Use as needed.
